Incy wincy fried spider is a regional delicacy in Cambodia a speciality of Skuon, a market town 75 kilometres from the capital Phnom Penh.
The spiders are bred in holes in the ground or gathered in the forests.
They are fried in oil, sugar and crushed garlic until the legs are crispy and the stomach contents not too runny.
The spiders are known as “a-ping” in Khmer or the Thai zebra tarantula in English, they are about the size of a human palm.

It is unclear how the street food came about, but many say it was during the brutal Khmer Rouge years when food was in short supply.
