Only 0.2% of ground coffee ends up in the drink, the rest is wasted. An average office building can produce 1 ton of coffee waste per month. This waste contains valuable nutrients that could be used in agriculture.

A Rotterdam startup grows oyster mushrooms on coffee waste. A team of seven produces 400 kilos of mushrooms monthly. The harvest is sold to restaurants for 10-15 euros per kilo.
